Another lovely photo by Lisa Silvestri
Here’s my February column for MyCurves magazine. It’s another 400 calorie dinner, this one based on the classic Sicilian winter salad of oranges and fennel. I’ve added chicory, seared shrimp, red onion, black olives, and good olive oil. It’s a one dish meal. I hope you like it.
“The aroma of optimism,” I love it! Just what we all need on a grey winter’s day like today. Thanks, Erica.
Girl of Steel,
Yes, I think so too. Oranges are nature’s winter gift, putting color and beauty in our lives when we need it most.
I haven’t tried the recipe, & I do like all of the components BUT I can’t think of them all in the same dish. the oranges & shrimp don’t seem compatible to me. I do have a salad recipe from my mother that is based on oranges…cut oranges into small pieces, slice green onions, mix together w/ EVOO, wine vinegar, salt & pepper. good w/ any meat. my mom was from Napoli & father from Bari so I don’t know the city of origin. but it is GOOD. I have used naval oranges, clementines, tangerines & it’s even excellent using kumquats!
La Zingara,
I know what you mean. I wasn’t sure until I tried it. In Sicily they pair all sorts of seafood with oranges, mostly more oily types like sardines and such, but I thought this one worked.
