Here’s my September recipe for Curves magazine. It’s a pork tenderloin seasoned with rosemary and fennel, paired with kale and apples tossed with a bit of Parmigiano, olive oil, and lemon. And it’s only 400 calories a serving. Have a nice, slimming early fall.

Can’t wait to try this.It looks great and not too slimming!
400 calories is not too slimming?
Reblogged this on City Girl Country.
Thank you so much City Girl Country!
the description sounds like a “tryer” & during the past couple years, I’ve been fixated on kale, but unfortunately, the recipe did not come along w/ your post.
i certainly would try it if i had the recipe. all the ingredients look good but i would exclude the rosemary b/c i don’t like the flavor. [yes, 400 calories for a whole meal is slimming!]
It’s actually 382 calories. It came in under. Ditch the rosemary. Use whatever you like. This is a challenge for me, this diet column. I didn’t know poop about calories before getting this job. It’s been really fun. Next month; Shrimp with beans and escarole.
Erica, what a wonderful dish this is!
Tasty and very easy.
Thank you!

Prakkie, Thanks. I love figuring out ways to make low calorie dishes that don’t sacrifice flavor. It’s not that hard, but it tastes a little thinking. Many more to come.
