I’m now writing a monthly column called “A Meal in Bowl” for Diane magazine, published by Curves Fitness. Just 400 calories a serving. That should be a challenge. Take a look. Next month I’m offering Minestrone with Lamb, Chickpeas, and Spring Greens.

Glen, The dietician who rules this magazine was horrified by the salt content so she cut way back on the ham and cheese and added a huge amount of walnuts. So please balance it accordingly.

Excellent!! Not only a lower calorie option but a low carb one as well….5 net carbs (total carbs less fiber.)
Diane, The dietician at this magazine focuses mainly on calories, but I’m working more trying to reduce carbs and refined food ingredients. My original recipe included more cheese, but the salt was evidently too high, so the diet lady reduced the cheese and added more walnuts. I think the balance in now a little off. Just so you know.
