Hey Eric,
The Ravida family, makers of the beautiful Ravida olive oil, do give classes at their estate in Menfi, but these are occasional classes, not a full culinary school experience. They are taught by Natalia Ravida, her aunt, and sometimes her mother or guest teachers. I’m not sure if they’re offered all year round. Here’s Natalia’s email. find out what they’re offering now.
There is a more structured school I know about in Cantania called Cucina del Sole. There website is cucinadelsole.it. These classes are taught by Eleonora Consoli and I have heard very good things about them.
