Hi Erica, I must mention this, after I looked at your beautiful website with the Pear and Almond Salad, and saw the portrait of Giovanna by Giuseppe Ghezzi in my amazement of this whole dreamlike event, I said there she is because she had the same exact look with her "how do you say it? Veil Scarf over her head, and Marie thought she must be an Angel sent by God in this dream! Well Thank you! and Regards, M Augusto

Hello Erica, This morning early about 5am I had a very vivid dream where this lady about 70 brought me some prepared pears in a bowl for me to eat. I then took the bowl and asked my friend to help me put them in a storage glass container type bottle with some other fruits. The lady who identified herself as Giovanna, said to me please do not mix the pears because she had already prepared them for me to eat. They were sliced and cooked in what looked to me to be a syrup. Then I woke up told my friend Marie about the dream! Later after I did some chores (I have Dogs and Puppies), I decided to Google the name Giovanna's Pears, and found her painting of the Pears, and came across your Website! What do you think? Interesting? Regards, M Augusto

Hi
I have this pleasant little book.

I checked out your profile. I like the fact that you are in the Slow Food movement. I cook from scratch most of the time and it's pleasantly surprising how little garbage I create.

Hi Fred,

I'm not sure why I feel this is true, but I think I got the soy sauce idea from Daniel Boulud, possibly after seeing it in one of his salad dressing recipes. Or maybe I just threw it in. I've been using it on salads for a long time, usually incorporating a few drops when there is a sweet ingredient in the salad, like you pointed out, in this case the pears. It's also really nice on seafood salads, such as calamari or shrimp, seeming to bring out the sweetness in these ingredients.

Erica, The addition of soy sauce to the dressing is brilliant for this recipe. Its the perfect foil for the pears. Where did you get the inspiration? Still addicted to your blog. -Fred
